
Serves 1.
Ingredients:
- 100gr salmon fillet with skin
- Lemon wedge
- Half Tomato
- 1/4 cucumber
- Handful of beans – trimmed and cut
- 1 potato peeled and cubed
- 1 egg firm boiled and peeled
- 50gr Green olives
Dressing ingredients:
- 2 tbsp of balsamic vinegar
- 2 tbsp of olive oil
- Juice of half a lemon
Cooking Instructions:
- Fill a medium pan with water and add potato and bring to the boil. Reduce heat to a gentle simmer and cook until just cooked. Add beans and cook for 2 minutes. Drain and run cold water over potato and beans until cool. Set aside.
- In a pan over medium heat, add 1 tbsp of oil. Sear the salmon, skin side down for 4 minutes, turn and cook for a further 4 minutes. Set aside.
- Mix salad ingredients together in a bowl – including cooled potato and beans.
- Mix dressing and pour over the salad.
- Put salad on plate, top with cooked salmon and boiled egg.
