Nicoise Salad

Bring a taste of the Mediterranean to your plate!

Serves 1.

Ingredients: 

  • 100gr salmon fillet with skin
  • Lemon wedge
  • Half Tomato
  • 1/4 cucumber
  • Handful of beans – trimmed and cut
  • 1 potato peeled and cubed
  • 1 egg firm boiled and peeled
  • 50gr Green olives

Dressing ingredients:

  • 2 tbsp of balsamic vinegar
  • 2 tbsp of olive oil
  • Juice of half a lemon

Cooking Instructions:

  1. Fill a medium pan with water and add potato and bring to the boil. Reduce heat to a gentle simmer and cook until just cooked. Add beans and cook for 2 minutes. Drain and run cold water over potato and beans until cool. Set aside.
  2. In a pan over medium heat, add 1 tbsp of oil. Sear the salmon, skin side down for 4 minutes, turn and cook for a further 4 minutes. Set aside.
  3. Mix salad ingredients together in a bowl – including cooled potato and beans.
  4. Mix dressing and pour over the salad.
  5. Put salad on plate, top with cooked salmon and boiled egg.
