Chicken Coconut and Green Bean Stir Fry

Quick, delicious, and perfect over rice or noodles!


  • 1 tbsp vegetable oil
  • 2 tbsp red curry paste
  • 2 chicken breast fillets, thinly sliced
  • 100g green beans, trimmed
  • ½ chilli thinly sliced
  • 1/3 cup coconut milk
  • ¼ basil leaves
  • ¼ cup chopped green onions
  • Lime wedges to serve

Cooking Instructions: 

  1. Heat a wok or large frying pan over high heat. Add the oil and curry paste and cook for 1 minute. Add the chicken and cook for 2-3 minutes or until cooked through. 
  2. Add the beans, chilli and coconut milk and cook for 1-2 minutes or until the beans are tender. Stir through the basil and green onions. 
  3. Serve with the lime wedges and rice.
