Ambrosia fruit salad

Enjoy a classic, sweet and simple fruit salad! Perfect for serving at Christmas lunches with family.

Ambrosia Fruit Salad

Ingredients: 

  • 1 can of mandarins, drained

  • 1 can of pineapple chunks, drained 

  • 1 jar of maraschino cherries, drained  

  • 1 cup of mini marshmallows 

  • 1 cup of shredded coconut 

  • 1 cup of nuts of your choice - we recommend pecans

For the whipped cream: either buy pre-made store bought or make from scratch: 

  • 1 cup of heavy whipping cream 

  • ¼ cup of powdered sugar

  • ¾ cups of sour cream or greek yoghurt 

  • 1 tsp of vanilla extract 

Method: 

  1. Drain fruit: Ensure all canned fruits are drained very well to prevent a watery salad

  2. Combine the dry ingredients: In a large bowl combine mandarins, pineapples, cherries, marshmallows, shredded coconut and optional nuts

  3. Prepare whipped cream (if making from scratch): In a separate bowl, whip the heavy cream and powdered sugar until soft peaks form. Then gently mix in the sour cream or yoghurt and vanilla extract until just combined. 

  4. Combine everything: Gently mix the whipped topping (either store-bought or home made) into the fruit mixture until all ingredients are evenly coated. Be careful not to break up the fruit! 

  5. Refrigerate: Cover the bowl and put into the fridge for at least 1-2 hours. 

  6. Serve: Garnish with a few extra cherries or nuts before serving.
