Ambrosia Fruit Salad
Ingredients:
1 can of mandarins, drained
1 can of pineapple chunks, drained
1 jar of maraschino cherries, drained
1 cup of mini marshmallows
1 cup of shredded coconut
1 cup of nuts of your choice - we recommend pecans
For the whipped cream: either buy pre-made store bought or make from scratch:
1 cup of heavy whipping cream
¼ cup of powdered sugar
¾ cups of sour cream or greek yoghurt
1 tsp of vanilla extract
Method:
Drain fruit: Ensure all canned fruits are drained very well to prevent a watery salad
Combine the dry ingredients: In a large bowl combine mandarins, pineapples, cherries, marshmallows, shredded coconut and optional nuts
Prepare whipped cream (if making from scratch): In a separate bowl, whip the heavy cream and powdered sugar until soft peaks form. Then gently mix in the sour cream or yoghurt and vanilla extract until just combined.
Combine everything: Gently mix the whipped topping (either store-bought or home made) into the fruit mixture until all ingredients are evenly coated. Be careful not to break up the fruit!
Refrigerate: Cover the bowl and put into the fridge for at least 1-2 hours.
Serve: Garnish with a few extra cherries or nuts before serving.
