Chicken, Vegetable and Hokkien Noodle Stir Fry

Asian fusion of succulent chicken, vibrant vegetables, and silky Hokkien noodles - yum!

Ingredients:

  • 1 tbsp oil
  • ¼ onion sliced
  • ¼ capsicum sliced
  • 1 garlic clove - peeled and crushed
  • 150g of sliced chicken breast
  • A handful of green beans - trimmed and sliced
  • ¼ cup of water
  • 2 tablespoons of soy
  • 1 tablespoon of chicken stock powder
  • 1 teaspoon of honey
  • 100g Hokkien noodles – heated for 60 seconds in microwave or immersed in boiled water.

Cooking instructions:

  1. In a heavy based saucepan, heat oil over medium heat, add onion, capsicum and garlic – cook 2 minutes.
  2. Add chicken and cook for 4 minutes. Add green beans, water, stock and stir over heat for 2 minutes, add honey. 
  3. Add noodles, salt and pepper and serve.

For a vegetarian option use a quarter of cubed sweet potato instead of chicken.
